How does homework differentiate the work for students in a mixed ability class, or for students who are too weak or strong for the set they are in?

Homework is pitched at the student’s level, regardless of their class or their ability within that class. For example, if a student is too weak for the set they are in, then they will see easier material in the topics you have put into the homework, whereas the stronger students will likely be progressed much quicker through our content and onto harder material as appropriate.
